It's September and nature is resting after a hot summer. The air is fresh and soon there will be beautiful colours and crisp mornings.
For us, it means starting our new way of thinking - the seasons. How each season has its own rituals, its own food, its own feel.
There's more to come - but for now, we're just giving you a sneak peek!
Like the exhibition itself, we start with autumn.
18 October - Flavours of the forest
Saturday 18 October will be the start of something really exciting: real wilderness burgers in a way you're almost guaranteed not to have tried before. Choose between reindeer burger with pickled spruce shoots or Moose burger with locally picked chanterellesboth with a wild garlic dressing topped with Västerbottenflarn. We will also be serving right rib burgers with pickled red onion and salmon burgers with a hint of citrus. All served with homemade burger buns, a nice coleslaw and chips on the side. Vegetarian options are available, but please let us know in advance.
We operate between 17 and 21 and the kitchen closes at 20.

A taster of the menu
The Christmas table at Vildsint offers a mix of the classic flavours and the little extra of the wilderness. Here you will find both gravad and smoked salmon, hot fish from Muurikkan, various herring pickles and matjes herring cake.
Among the meat dishes you'll find ribs, meatballs, prince's sausage on lamb and, if the hunt is successful, some more wild surprises. How about smoked reindeer on a bed of rocket with blue cheese, pears, horseradish cream and roasted pine nuts?
We will have a large green selection, for example through our baked celeriac or pomegranate salad. However, to get the best experience, we wish that vegetarian requests are communicated in connection with booking.
Finally, we will have a large and exciting dessert table, and we will serve both mulled wine and cooked coffee.
